Stardew is a fun little Farming Sim, more arcade like and not completely realistic, obviously. Amazing, but more akin to Harvest Moon than a farming sim, still great, still put easily 100+ hours into it.
BUT if you are looking for as close to realism as you can get virtually as a farmer, then by all means Farming Simulator is the game for you. And I don't mean that in a bad way, it's unlike anything else out there, but there's definitely some depth to it. Sort of niche playerbase, but can still be very enjoyable.
I've played both, and after playing about 30 hours of Farming Simulator it's definitely the real deal. As always I'd recommend watching gameplay and see if it interests you.
