Are the Mario themed Switches rare? At my Target, they've had 11-13 of them since release. Plus an additional 10 neon and gray Switches. Nobody shops at this Target, I swear...

Nintendo appears to be getting more inventory out. I have been seeing them in multiple stores around Indy (Mario, Neon, and Gray).

Nintendo said they were upping production in anticipation of holiday season, so expect to see more in the coming months. Becoming much easier to find

Not really. It’s not limited editions and if it were you wouldn’t find any lying around.
