I just started playing Destiny 2, so it's all a little new for me. I'd love to play with people, I even joined the Discord group. My question is mostly how does it work hooking up with randoms. Do I just jump into an occupied room and join a game, or do I need to be invited, or what?

Strikes (lvl 15+ "mini raids") or the crucible (pvp) without a group the system groups you with strangers. Anything else you need to have a clan or add friends and start a fireteam aka group. You can do both strikes and the crucible with friends also.
