I always tell my friend i think its op of genji being able to deflect and then use his slash while deflecting. He says I should just shoot him when he come in with the slash. How does one do that? Ive died way to many times to that.

Just play Hanzo, give him a firm Hello/Thank You when he decides to deflect, and aim for when he inevitably dashes because Genji's seem incapable of not using both cooldowns in the start of a fight.

Just shoot when he dashes. Even if he goes through you and pass you he takes damage because the trail counts as his body. Its retarded af but yes his dash trail allows him to take damage
