IMO Widow should be an Offensive hero, I think it works best in Attack, maybe it's just me but I get way more kills that way. On escort the payload progresses toward the defending team, so unless they have specific harass heroes on you, you get more openings and mobility then the opposite
In the other hand she won't help pushing the payload on it so won't contribute that way

Widow works best on 2 cp defense and attack tbh

Attack Widow is very map specific

Example; Kings Row/Hanamura Point A both have big open choke points and high ground that she can get to, she excels at picking off supports

But she'll struggle to get much done on (example) Lunar Horizon Colony or Hollywood because the chokepoint are much tighter and theres more obstacles for supports and squishies to hide behind, restricting her line of sight on them
