Does anyone here play any games on an i5 2520m? I can buy a couple laptops that have them and I could probably build a desktop with the mobo from one of them combined with the RAM and HDDs from the rest. Could use one of those adapters to hook up the gpu.

dont do that, dont put laptop stuff in a desktop case

'Probably' is the keyword here. Laptop's mobo is literally not made for commercial desktop's case, you'd have to make your own custom case if you want to try this. Also, one weakness of trying to use laptop's mobo, you can't add a discrete GPU to it unless you're willing to part with a pretty hefty amount of money.
