Ryzen 5 build or ryzen 7 build?

Ryzen 7 Build if you will use it to it's full advantage. Ryzen 5 build if it's just for casual use with no streaming or video editing etc. And also replace the motherboard with a B350 Chipset as a minimum or an X370 chipset if it's in your budget

The Ryzen 7 one would be great, then just buy a decent GPU then ur on!
