If your goal is 4k gaming I think it would be better to wait for volta next year because some games don't support sli so it's better to just have one card. If you want to though you could just do a single 1080ti it's up to you.

I find that SLI is only dead for the lower end. As why would you want to run SLI to equal the performance of a higher end card. Just get the better card. Which I'm sure is the best business move as companies want you to buy cards. But for games that can get extremely demanding even for the best cards, especially 4k. They always seem to have a perfectly working SLI profile.
