For gaming and general computer usage... What CPU should I build around?
*7700k=8700k*
Both systems will have the following:
4x8GB 3200MHz Corsair Vengeance LED
X370/Z370 motherboard
EVGA CLC 280
EVGA SuperNOVA 750w G2
Samsung 960 Evo 250GB (Boot)
Kingston HyperX 3K 240GB (Game storage)
2x Seagate Barracuda 500GB (Main storage)
Samsung 160GB Laptop HDD (Recording Drive)
EVGA GTX 1080 ti FTW Hybrid

LG 29UM68 2560x1080 29" 75Hz (Upgrading to a 34" 3440x1440 soon)

I say AMD. As you go up in resolution, the load tends to be placed more on the graphics card (which is a tank on it's own, I have a 1080ti on water myself). With the AMD you'll get more cores for overall performance rather than just gaming performance. However, with the 8700k coming around the bend, if it overclocks as high as the reports are saying, then I'd opt for that, simply because of the high OC and two additional physical cores over the 7700k
