Can someone pleas help me, I don't know what I'm doing wrong. I have stone water tanks on top of my greenhouse and they WILL NOT HOLD WATER. They keep reading zero even if I manually fill them. I'm about to tear my hair out. HELP!

Do your crop plot show they have water. Tank only holds 200 crop plots hold like 600 each

Yes, they have water, but the tanks won't stay filled, are they not meant to?

Not untill the plot are 100% filled. You may have to wait for rain to fill the system with water
