So. Whenever I dock my switch to play on the tv my controllers start lagging or not responding in game. Any idea why?..

Make sure nothing is covering or blocking your dock, even your tv

Try updating ur controllors/joycons

Tv lag. Check and see if you have a video game mode on your tv settings
