Choppy? Do you mean sharp? Check "Sharpness" in your monitor settings

HDMI can only handle 60hz. Display port and dvi can handle more. The difference with dvi and display port, is carrying sound, which dvi can not.

HDMI is capped at 60hz you need dvi-d or display port.
