You have to uncheck singleplayer settings, then go and edit each individual stat.

I put 4 for taming with single player unchecked yet tames are taming slow

Was the server online when you done it? I had same problem, shut server down done stats then it saved properly

Seems simple but make sure you restart it after modifying filled and stats
